Caramelised Cherry Crepes

Caramelised Cherry Crepes


  • 2 cups milk
  • 1 cup all purpose flour
  • 2 egg whites
  • 1 egg
  • 1 tbsp YVH Pure Honey
  • 1 tbsp vegetable oil
  • 1/8 tsp salt
  • 400g cherries, rinsed and stoned
  • 2 tbsp sugar
  • 100ml port wine
  • 2 tbsp YVH Lemon Juice


  1. Combine milk, flour, egg whites, egg, honey, vegetable oil, and salt in a food processor until smooth.
  2. Too cook crepes, lightly spray saucepan with non-stick cooking spray and place over medium-high heat. Pour 1/4 cup batter into saucepan and rotate to evenly cover base. Cook until edges begin to brown, before flipping and cooking until crepe is lightly browned. Remove crepe from pan and repeat this step for entire batter.
  3. In a saucepan, caramelise the sugar and then add port wine, stirring briefly. Add cherries and lemon juice, and then simmer over low heat until cherries soften and liquid begins to thicken.
  4. Remove from heat, and drizzle over crepes to serve.
