Mexican Summer Salad


  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cucumber, diced
  • 1/2 salad onion, finely chopped
  • 1/2 cup corn cornels
  • 1/3 bunch cilantro, roughly chopped


  • 1/3 cup extra virgin olive oil
  • 1/3 cup our Yarra Valley Hilltop Lime Juice
  • Freshly ground salt & pepper to taste


  1. Whisk together all dressing ingredients in a small bowl and set aside
  2. Combine all chopped salad ingredients in a large salad bowl
  3. Drizzle dressing over salad, and toss together to enjoy.
